ingredients
- 1 lb sharp cheddar cheese
- 1 lb monterey jack cheese
- 8 ounces cream cheese
- 1 teaspoon onion, grated
- 8 ounces pimientos, drained and chopped
- 1 teaspoon vinegar
- 1⁄2 teaspoon white pepper (or more to taste)
- 1 dash red pepper
- 1⁄2 teaspoon black pepper
- 1⁄2 teaspoon thyme (or more to taste)
- 2 dashes Worcestershire sauce
- 1⁄2 cup mayonnaise
- 1 dash lemon juice
directions
- Mix it all together in a food processor. Or to keep it simpler, just buy the finely shredded cheese and mix everything in a big bowl.

For years I have attempted to find a decent recipe that would stand in the place of Kraft's Pimento Cheese Spread which I love but will not pay such an exorbitant price for a tiny jar of it. Well, yours hit the spot! Flavor wise it is super & to make it easier to spread on crackers or veggies I just add a bit of milk. And you are right...best sandwich ever! I got married to my high school sweetheart in August 06 at the ripe old age of 21, and my husband Luke and I just moved to Birmingham, AL from Auburn. He's in his second year of dental school at UAB. I have a BFA in Graphic Design, and I'm a designer at Time Inc and doing freelance design work on the side. I'm planning to go to grad school for a Master's of Fine Arts in Book Arts some time or another. I had deferred because I think the timing will be better once Luke gets out of school and perhaps I might not need to commute the hour over there.

Lately I've been trying to cut out the sugar, which is hard, because Luke likes sugary pancakes and cereal, and because I like baking things. I need to quit baking! Trying to lose the newlywed nine so I can fit into my winter clothes.
