Perfect Spicy Sausage Pasta Salad

"Gorgeous!! Morish!! ...and the easiest Pasta Salad to make by far!! One helping is never enough!! Prep time does not include the time taken to *cook the Pasta which usually takes about 10 minutes in the microwave. I add plenty of salt and a good dollop of Olive Oil to the water. (I find the Olive Oil flavours the Pasta) 'BEER STICKS' are about the size of Frankfurters, but the meat is like that of pepperoni OR salami. They are called Beer Sticks in N.Z. but there may well be another name used for them elsewhere."

  • Cook Pasta in the usual way.
  • Drain.
  • Mix together the Pasta, chopped Spring Onions and sliced Beer Sticks.
  • Add Thousand Island Dressing and mix through.

  1. A great salad Karin. I made it for a work function, and it was truly so easy. I used cabana, and threw in some finely diced red peppers, and it got great reviews from heaps of people!
     
  2. i can't believe how good this is for the little preperation involved. that is what sold me. i didn't change a thing, and it was so quick. i am not usually a huge fan of thousand island dressing, but it's not as "overpowering" as it is on a lettuce salad. great dish, definately something i will make when we have company or i need to bring a dish to a potluck, etc.
     
  3. This is THE thing to make when you need a "dish to pass". Soooo simple and tasty - I can see it will be a big picnic hit. Karin's right - I wouldn't add a thng to this. I used spicy German sausages but any kind of spicy sausage will work as a perfect compliment to the slightly sweet dressing. Thanks, Karin!!!
     
  4. I tried this because Karin listed it as a recipe she wished someone would try, and I'm not sorry I did. Of course, I couldn't find beer sausage so I ended up using pepperoni and summer sausage. It was really easy to put together. The Thousand Island dressing was a little sweet. I will make this again, but I think the next time I'll use Italian dressing. I recommend this.

I live in New Zealand, I'm married and my husband and I have no children....but we do have a dog (Bruno the Poodle), and a cat (Gus the Birman)! Back in November 2000, I resigned from a 17yr career with Air New Zealand as a Purser. I am now working as a Private Investigator with my husband - having his own Investigation Company. The work is varied and at times very rewarding as I'm sure you can imagine! I have an absolute passion for shoes...what woman doesn't??!!!, and fashion generally, including that of Home Interiors and furnishings, and gardens. I enjoy, among many past-times, art, gardening, water ski-ing, power walking, and ofcourse...COOKING!!(and entertaining). I guess my pet peeve would be running late for an appointment somewhere! 10 minutes early = 10 minutes late with me!! So, ON time is VERY late!!! If I had a month off - no work, and no responsibilities I would buy 2 return airfares to Honolulu!! And spend 2 weeks on Waikiki Beach with my husband and 2 weeks at home in the kitchen!! And entertaining friends and family.
