Pepper Jack Pepperoni Pizza Omelet

"I basically wanted to make an omelet with all the ingredients in a pizza."

• Yields: 1 omelet
• Serves: 1

ingredients

• 3 eggs
• 3 slices monterey jack pepper cheese
• sliced pepperoni
• 1 dash salt
• jalapeno (optional)
• cooking spray
• 2 tablespoons salsa

directions

1. Spray pan with cooking spray.
2. Beat eggs and broil on low heat until mostly cooked.
3. place slices of cheese, pepperoni, and jalapeños over omelet.
4. Let cook until cheese is mostly melted.
5. Add a dash of salt.
6. Fold over, spoon salsa over omelet and serve.
