Penne With Cabbage and Mushrooms

  • Cook pasta according to package directions.
  • Meanwhile, gently press garlic cloves with the flat of your knife.
  • Place the garlic in a skillet with olive oil and rosemary and saute for 2 minutes over medium heat.
  • Add cabbage and mushrooms, saute for 5 minutes, then add wine.
  • Continue cooking until the wine has evaporated; add hot chicken broth and simmer for 10 minutes.
  • Remove the garlic cloves from the skillet.
  • Drain pasta and toss with butter and sauce.
  • Add cheese and parsley and toss again.

Questions & Replies

  1. Why is it 1 and a half garlic cloves? What do you do with the half a clove you don't use? Also, why take it out before serving? Garlic is delicious.

  1. As a lover of cabbage and shrooms, this recipe was totally me. I did not care for the brothy sauce as I could not get it reduced. . . .so I added some half and half and some corn starch and it turned out good. Made for August AUS/NZ recipe swap. Thanks.
     
  2. These pasta are great. I love the taste. I didn't have white wine so I used only chicken broth. In the skillet I used only 1 tbs of olive oil (not 3). It was enough. Even my son liked this. Thanks Lainey. Made for photo tag :)
