Pecan Pie Mini Muffins

ingredients
- 1 cup brown sugar, packed
- 1⁄2 cup flour
- 1 cup pecans, chopped
- 2⁄3 cup butter, melted
- 2 eggs, beaten
directions
- In a bowl, combine brown sugar, flour and pecans; set aside.
- In a separate bowl, combine butter and eggs; stir in flour mixture.
- Fill greased and floured miniature muffin tins about 2/3 full.
- Bake at 350 degrees for 20-25 minutes, or until muffins test done.
- Remove muffins from tins immediately and cool on wire racks.
- Makes 2 1/2 dozen.

These are so easy and I always have the ingredients in my pantry, which means I will probably gain 10 pounds. I only baked them 18 minutes and they were perfect. These little muffins packed a great pecan pie flavor in them! I can't wait to share them with my friends tomorrow....If I don't eat them all first!

OK....so it's not a picture of me....these 3 beauties are my babies...and I look just like THEM!
