Ouick and Easy Mango Chicken

A no time to cook dish, rice goes well with this, but we like it with oven baked potato wedges and a salad. You can substitute fresh chilies for the chili sauce.

  • Preheat oven to 400 degrees F.
  • Mix all ingredients together and spread over the chicken thighs.
  • Bake in a roasting tin for approx 45 minutes or until the chicken juices run clear.

    This was a flavorful, easy to prepare chicken dish. I used chicken tenderloins, so only cooked them for about 1/2 hour. I was using hot sauce, so cut back to a bit less than 1 tsp. If I'd had any chili sauce, I'd probably have tried the full 2 tsp. Wasn't sure how much lime juice to add, so I squeezed 1/2 of the lime - probably about 1 1/2 T. The flavors combined well; it was spicy enough that dh & I enjoyed it, but not too much for dd.

    Delicious. But I don't know how you got away with using 4 tblsp. mango chutney. I used A LOT more than that. I wanted the chicken to be pretty well coated. It was quick and easy to prepare, as long as you don't have to make the mango chutney. That took a bit of time.

    OMG!!! I just served this to 10 other people, and everyone loved it! this was divine, really really lovely. I didn't use as much tabasco as was required, but it still had a bit of a kick to it. It was absolutely lovely - thank you Pets!

    i thought this sauce was delicious, my kidsand dh found it to be a bit spicy--i used home made chutney, and chicken breasts, i had fun with this recipe
