Haitian Mango Chicken

- 1⁄4 cup chopped green pepper
- 2 tablespoons butter
- 1 chicken bouillon cube, crumbled
- 1 cup mango, pureed
- 1⁄2 cup orange juice
- 1⁄2 cup water
- 1⁄4 cup dry sherry
- 1 tbsp.candied ginger, diced
- 1 1⁄2 cups mangoes, cubed
- 4 boneless chicken breasts
- 2 cups rice, dry and cooked
directions
- Pound chicken breasts to 1/4 inch thick.
- Saute with green pepper in butter. Remove chicken from skillet. Add bouillon, pureed mango, orange juice, water, sherry and ginger.
- Stir and simmer 5-10 minutes until sauce thickens.
- Return chicken to skillet with cubed mango. Heat through.
- Serve with rice.
