Nutty Pineapple Nibbles ( Stuffed Celery)

  • Rinse the celery, them trim off the leafy parts, and cut into 10-inch pieces.
  • In a medium-sized bowl, combine the drained pineapple, cream cheese, peanut butter, and honey.
  • Stir with a rubber spatula until well mixed.
  • Stir in the raisins or fruit bits and hot sauce, if desired.
  • Using a table knife, fill the groove of each celery stalk with the cheese mixture.
  • Sprinkle the crushed nuts over the stalks.

  2. Yummy and different! DH and I enjoyed these, we were even dipping celery stalks and crackers in some leftover filling. The kids, however, wouldn't touch them..I think it's a cream cheese thing. Not overly sweet and a snack you can feel good feeding the family. I used dried cranberries and think adding some extras on top as ants on a log would be a nice touch. Dried pineapple or other dried tropical fruit would be good, too. Noticed hot sauce in the directions...? Thanks, Mercy, for sharing!
     
  3. OMG!!! When I was a wee-one, Mom used to serve celery stuffed with peanut butter or cream cheese...this is the best of both worlds (and then some)!! ABSOLUTELY LOVED IT, and wouldn't change a thing! BTW, I used dried cranberries for the dried fruit. YUMMY! Thanks for posting! ~Manda
