Great cookies - easy to make, quick and taste terrific. I had to use soy milk and it worked just fine. I didn't count how many cookies it made, but there were plenty that were about 2" long shaped like "elephant toes". Thanks for posting this, Darla. I'm sending them off with hubby on his road trip - too much of a temptation for me to keep in the house.

I have been looking for the recipe for a long time now....as a kid we called them elephant toes and we rolled them in powderd sugar..........my adult boys were asking me about them a few months ago....thanks for sharing! I used Herseys Special Dark Cocoa powder and I am telling you it is fantastic!!!! I also adjusted the cooking time to 3 mins and added about 1/2 cup more oats :)
