Nif's Roasted Grape Tomatoes (Try Them on the Barbecue!)

- 4 -5 cups grape tomatoes
- 2 -3 garlic cloves, chopped or sliced (or more if you love garlic!)
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon ground sea salt (to taste)
- 1 teaspoon fresh ground black pepper (to taste)
directions
- Preheat oven to 400°F.
- Mix tomatoes, garlic,and olive oil in a bowl. Sprinkle with salt and pepper, to taste.
- Place tomatoes in a baking dish large enough for the tomatoes to be in 1 layer. Do not overcrowd! Roast for 20 minutes, and then stir. Add water if the tomatoes are too dry. Bake for 20 to 30 more minutes.
- You will know that the tomatoes are done when they have just begun to shrivel and the liquid in the dish is a bit thicker. The skins should have split a bit too. Serve immediately.

Very delicious. I pressed my garlic as I was short on time. I lowered the oven temperature part way through but my oven is wacky. I didn't require the full cooking time but was only doing about 1 1/2 cups worth. Had with recipe#423998 over rice instead of pasta and without the cucumber in the sauce, along with recipe#387418 for a delicious meal. Worthy of making again. I love great food and I particularly like trying cuisines new to me! Although I don't prepare as much food as I used to, creating in my kitchen is still one of my favourite things to do. Enjoy!
