Naked Apple Pie

"Makes its own crust while baking. Serve this with cheese or whipped cream, or just plain. Super! Recipe is from General Hospital Medical Center in Everett, WA. (The origional recipe calls for the walnuts, cut in half...but I don't like that huge of walnut-chunks at all)"

  • Beat egg.
  • Add sugar and vanilla.
  • Sift flour with salt and baking powder, into egg mixture.
  • Stir in apples and nuts.
  • Spread in a greased 9-inch pie plate.
  • Bake at 350 for 30 minutes.

I actually have this same recipe from a newspaper from years ago (at least 15 years old) and it out of "The Compleat(sic) I Hate to Cook Book" by Peg Bracken.<br/>This is a very quick & easy recipe and one I go to alot when I want apples and something sweet for snacking later in the evening. A little scoop of vanilla ice cream or a squirt of whipped cream is great. Easily reheats in microwave.
     
  2. I loved this - soooooo easy to do - 1 cup of sugar was too much for my taste so next time I will cut it back to 1/2 cup. Also I added a little water to loosen the mixture too - an all round success though and it could be done with all types of fruit !!!
     
  3. Fast and easy to do with things you have at home. I don't know if I would call it a pie, or a cake, or what exactly. It didn't separate into layers, but then, maybe it wasn't supposed to. It is chunky and pretty and everyone will like it. We had it plain, but it could be fancier with the addition of whipped cream or custard or ice cream and a sprinkle of cinnamon. Took more like 35-40 minutes for me to bake. I did add some cinnamon, and sliced almonds that needed to be used. You definitely don't need the nuts at all. Thanks!
