Mom's Broccoli & Green Olive Salad

"Mom has made this for years. We love olives and this gives the salad a zip. Of course, adjusting the amounts of each ingredient is a personal choice, if you like more bacon or more olives, etc."

  • Mix broccoli, bacon and green olives together.
  • Mix in enough mayo to hold the above ingredients together.
  • Gently mix in the eggs, adding more mayo to hold all ingredients together.
  • We serve this on lettuce leaves.

  1. Oh, wow! This is like the special broccoli salad I used to get at my grocery store's deli 12 years ago! I've missed it. This is such a good combination of ingredients. I was wondering what to take with me to a family get-together next week end. Great recipe!
     
  2. Well, I can't believe no one has tried this fabulous salad. It has a lot of flavor and the colors are beautiful. I used Hellman's Light Mayonnaise and it very good. This would make a lovely potluck dish too. Thanks for sharing this wonderful recipe, Merlot!!
     
  3. Love olives and love broccoli, sooo..love this salad! Added some chopped red pepper and a leetle low-fat Ranch dressing to the salad in place of the mayo. Delish!
     
  4. I have looked high and low for this recipe. My sister made this and it was one of the only salads my family would eat. Could not find it. Finally, I entered all the ingredients I could remember and Voila! you had it. I made it and it was perfect. Thank you so much.
     
  5. Not sure why I decided to try just one more Broccoli salad recipe? They never realy wanted me to make it again. BUT am I ever glad I did this one. It tastes fantastic right away and I had to stop tasting, so there would be some left for company tomorrow! :-) I also added some green onion and left the eggs out. So in order to show my appreciation, I will thank you by trying and reviewing one of YOUR recipes. Now, a little about me . . . It's hard to believe I've been a member for over 7 years now! Once I discovered Zaar, I never looked back at the other sites. This place is truly like family, sitting around sharing great recipes, helpful hints and just chit-chatting about our daily lives. Hubby and I were fortunate enough to be able to retire early and now enjoy traveling in our motorhome :) . Our travels have taken us all over this great country of ours and meeting new and exciting people along the way is an extra bonus. We are blessed. We usually alternate between Florida Keys and Arizona for the winters. The rest of the year, you can find us just about any place. We love our home on the lake, but there is a bit of gypsy in us both and we hit the road as much as we possibly can. I subscribe to Taste of Home and own EVERY Southern Living Annual since 1979. I guess my biggest pet peeve is people who are negative all the time. Because I enjoy life so much, I try to avoid such people. Life is too short.
