  • In skillet, cook the bacon over medium heat until crisp. Drain liquid, place on paper towel and crumble.
  • Pour into a small bowl the vinegar, mustard, and garlic. Mix these ingredients first, and then add olive oil and black pepper.
  • In large bowl, toss the spinach, arugula. Pour half of the dressing on the greens and toss.
  • Add the feta cheese, bacon, avocado and the remaining dressing, then toss.
  • Season with pepper.

I live in a rural area where the selection of grocery store items are much less than areas of higher population. I like vegetable gardening, and in particular growing eggplant & zucchini. In my hardiness zone, growing the eggplant is a challenge, so I am learning different ways to extend the growing season.
