- 9 slices bacon (4 ounces)
- 1 tablespoon cider vinegar
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- 1 bunch spinach
- 2⁄3 cup olive oil
- fresh coarse ground black pepper
- 2 bunches watercress
- 8 ounces feta cheese
- 1 avocado
- 1 bunch arugula
directions
- In skillet, cook the bacon over medium heat until crisp. Drain liquid, place on paper towel and crumble.
- Pour into a small bowl the vinegar, mustard, and garlic. Mix these ingredients first, and then add olive oil and black pepper.
- In large bowl, toss the spinach, arugula. Pour half of the dressing on the greens and toss.
- Add the feta cheese, bacon, avocado and the remaining dressing, then toss.
- Season with pepper.

I live in a rural area where the selection of grocery store items are much less than areas of higher population.
I like vegetable gardening, and in particular growing eggplant & zucchini. In my hardiness zone, growing the eggplant is a challenge, so I am learning different ways to extend the growing season.
