- 2 tablespoons vegetable oil
- 5 ears corn
- 1 teaspoon salt
- 2 tablespoons mayonnaise or 2 tablespoons Mexican crema
- 3 ounces feta cheese or 3 ounces Cotija cheese, crumbled
- 1⁄2 cup scallion, sliced
- 1⁄2 cup cilantro, chopped
- 1 jalapeno, seeded & diced
- 2 garlic cloves, minced
- juice of one lime
- 1⁄2 teaspoon chili powder
directions
- Cut corn off cob.
- In a cast iron pan, heat oil over hight heat. Add corn. Season with salt. Cook for about 15 minutes until corn starts to brown.
- Transfer corn to bowl and mix with mayo/crema, feta/cojita, scallions, cilantro, jalapeño, garlic, lime juice & chili powder. Season with salt if desired.
- Can be served hot or cold.
