Meatballs a La Ritz

- Blend together the ingredients for the meatballs and make little balls with your hands, they should be around 2 to 3 inches big.
- Stir fry the balls on a hot pan without oil or bake them in the oven at 300°F for 15 to 20 minutes.
- Blend together the ingredients for the sauce in a suitable pot and heat up.
- Thicken with sauce thickener if you like.
- Serve your meatballs folded into the sauce togehter with the condiments mentioned above.

I can see children liking this more than adults. I prepared the sauce and drizzled it all over the meatballs. Ritz 'Roasted Vegetables' crackers were used instead of standard Ritz. The meatball mixture was made early in the day then refrigerated. Baked for about 20 minutes. Served with rice and steamed veggies. Easy to make. Mixture was a little dry but that's okay with me because the meatballs kept their shape well. Cornstarch subbed for potato starch. Reviewed for Ramadan Tag.

Originaly from Austria i moved to Iceland in 2002 after a life long longing for this country i felt at home at once and now it is the place where i belong. I am living with my wonderful husband in a nice, bright flat in the subburb of our capital, Reykjavik. I love to cook and eat healthy and i mainly use whole grain. I do not use any ready made mixes and i try to keep the food i cook close to the ingrediants i used.
I am an elementary school teacher but i work in a kindergarden now and i actually prefer that field.
Besides cooking and though especially baking, i like photography, knitting, swimming, long walks, all kind of sports, animals and nature among much more.
