Marinated Mushrooms

- 4 cups whole mushrooms, cleaned & stems removed
- 1⁄4 cup olive oil
- 1⁄4 cup vegetable oil
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh parsley, minced
- 2 garlic cloves, minced
- 1 teaspoon dried basil
- 1⁄2 teaspoon dried oregano
- 3⁄4 teaspoon salt
- 1⁄4 teaspoon ground pepper
- 1 1⁄2 teaspoons Worcestershire sauce
directions
- Combine all ingredients to make marinade.
- Pour over mushrooms and stir gently to coat.
- Cover container and refrigerate overnight.
- Stir or shake mushrooms occasionally, to ensure contact with marinade.
- Optional: If you prefer, use 1/2 cup of your favorite olive oil, instead of 1/4 cup olive oil & 1/4 cup vegetable oil.

This was wonderful. The mushrooms were absolutely delicious and I didn't need to boil them or use fancy ingredients. I halved the recipe and cut back a little on the oil. I also added 1/2 tsp of thyme. After 6 hours it was perfect and I would probably marinade it overnight to enhance the flavour even more.

I love everything about food--cooking, eating, even grocery shopping, so I guess that would qualify me as a foodie! I love to read cookbooks and watch Food TV for inspiration, but mostly I just cook without recipes. There is nothing that I like better than plying my family and friends with a home-cooked meal. Food is love.
