  • 1 small onion, finely chopped
  • 4 tablespoons madeira wine
  • 3 cups beef stock
  • 12 ounce butter
  • salt and black pepper

directions

  • Sauté the onions in a hot pan until they are well browned then add the Madeira.
  • Reduce the liquid by half, add the stock and then reduce by half again. Season with salt and pepper.
  • Pass through a sieve, then add the butter. Serve warm.
