Lemon Garlic Roast Pork

- 1 (3 lb) lean boneless pork loin
- 3⁄4 teaspoon lemon rind, grated
- 3 garlic cloves, minced
- 1 (14 1/2 ounce) can reduced-sodium chicken broth
directions
- Trim fat from pork. Combine lemon rind and garlic and rub evenly over pork. Place pork in a casserole dish and add broth. Bake at 400 degrees for 30 minutes. Turn pork over and bake an additional 35 minutes. Discard broth and serve. 12 servings.

It could NOT get any easier than this! I used a pork tenderloin but followed everything else exactly. The pork was very tender with a refreshingly simple flavor. I'm always on the lookout for a tenderloin recipe that doesn't require marinating & this one will be kept handy. With just 3 ingredients, always on hand, this is a keeper!
