Lemon Blueberry Bread

"I came up with this when I was trying to get rid of some blueberries years ago. I just found it in one of my old notebooks. Its great even on the second morning.. If it lasts that long. Makes the whole house smell wonderful."

  • Preheat oven to 350.
  • Lightly grease a 8x4 inch loaf pan.
  • In a bowl, beat butter, 1 cup of sugar, juice and eggs.
  • In separate bowl combine flour, baking powder, salt, and lemon zest; stir into egg mixture alternately with milk. Gently fold in nuts and blueberries.
  • Pour batter into pan. Bake for 60-70 minutes or until toothpick comes out clean. Cool in pan for 10 minutes.
  • Meanwhile, combine lemon juice and powdered sugar in a small bowl. Turn bread onto a rack and drizzle with glaze.
  • You can sub cranberries, if so use orange juice in place of the lemon or the lemon is still wonderful. Enjoy.
