- 1⁄3 cup of melted butter
- 1 cup sugar
- 3 tablespoons fresh lemon juice
- 2 eggs
- 1 1⁄2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 tablespoons grated lemon zest
- 1⁄2 cup milk
- 1⁄2 cup chopped walnuts
- 1 cup fresh blueberries or 1 cup frozen blueberries
- 2 tablespoons lemon juice
- 1⁄4 cup powdered sugar
directions
- Preheat oven to 350.
- Lightly grease a 8x4 inch loaf pan.
- In a bowl, beat butter, 1 cup of sugar, juice and eggs.
- In separate bowl combine flour, baking powder, salt, and lemon zest; stir into egg mixture alternately with milk. Gently fold in nuts and blueberries.
- Pour batter into pan. Bake for 60-70 minutes or until toothpick comes out clean. Cool in pan for 10 minutes.
- Meanwhile, combine lemon juice and powdered sugar in a small bowl. Turn bread onto a rack and drizzle with glaze.
- You can sub cranberries, if so use orange juice in place of the lemon or the lemon is still wonderful. Enjoy.
