Key Lime Cheese Ball

"I found this recipe online, but I haven't been able to find it, again, to thank the submitter. I've taken the commercially prepared mix cheese ball to several functions, but my friends liked this one just as much, if not more, and it's a lot cheaper!"

  • Using a mixer, mix all ingredients until well incorporated.
  • Roll into a ball and refrigerate for 2 hours or until firmer.
  • Roll ball into crumbs.
  • Serve with a variety of vanilla wafers, gingersnaps, graham crackers or sticks, or shortbread cookies.

  1. Recipe as it stands, doesn't work. So, I only added 1/3 of the lime jello package, skipped the butter, and added 1/3 cup sugar as well as a tsp vanilla. This is the real deal. Delicious! I like to eat it with Teddy Grahams.
     
  2. I followed the changes made by MNCupcake and it turned out PERFECTLY! (4 STARS only because it needs the changes MNCupcake listed) I also used several drops of lime juice, you can use more or none depending on how tart you want it to be.

  4. This was great! I couldn't get over the bright green color! I used 3T lime juice instead of the zest. I thought it was really good and so did everyone else. We ate it with graham crackers. Thought it was best the day after it's made.
     
  5. Better than the commercial mix by far! I added 1 tsp. vanilla. And instead of the zest, I used all the juice from the lime. Skipped the graham cracker crumbs and put it in a bowl rather than make it into a ball. Everyone who tried it agreed that the tart lime flavor is what makes it so special. Bought my animal crackers at Bed Bath and Beyond for a bargain and everyone thought they were "gourmet" crackers bought at a speciality shop.

I'm a retired teacher, now, whose children have grown up, and abandoned me! ? Rather than cooking huge portions, I'm on the hunt for cooking-for-one ideas, or meals that can be tweaked, to make eating leftovers more varied and exciting.
