Jell-O 123 Layered Dessert

ingredients
- 1 (3 ounce) box any flavor Jello gelatin
- 1 1⁄2 cups boiling water
- 1 (8 ounce) container of frozen Cool Whip
directions
- Stir boiling water into JELL-O in a bowl until dissolved.
- Add 2/3 of frozen COOL WHIP to same bowl one spoonful at a time, whisking until it is melted and blended.
- Pour into small clear drinking glasses.
- Refrigerate at least 3 hours, until set.
- Top layered dessert with remaining whipped topping and ENJOY!

My mother made this desert somewhere differently. She would first make the different flavor Jell-O and make sure that they set. Then she would mix unflavored jelli with whip cream, and a little pineapple juice. Then she would Chop the different flavored gelatin into squares and mix them with the whip cream mixture and refrigerate it. It was an awesome dessert that I enjoy even today as an adult.

This was SO much easier than those other recipes that call for using a blender and ice (which I tried, but ended up with a lumpy, liquid-y mess). This was very quick and easy. I do see varying pics of the resulting layers, though. So, I wonder what makes the difference? This one came out with the middle layer being the thickest (you can't see the entire pic, but the bottom layer is pure gelatin, as expected, and somewhere between the top and middle layer in thickness). Maybe adding more Cool Whip would have made the top layer thicker? I don't know. I plan on experimenting until I get it just right.

I wasn't overly impressed with this, but my 3 year old loved it. I thought the middle layer was a bit grainy textured - maybe it was my imagination but my husband thought so too. I don't know why that would be since the Jello was well dissolved when I added the Cool Whip. In any case, it's not my favorite way to eat Jello but I will make it again since my 3 year old loves it, and it's easy and fun for him to help me make.
