Japanese Chess Pie

"This recipe came from my co-worker who makes it for everyones' birthdays! We all love it! I don't like raisins so I leave them out when I make it and slighty increase the coconut and pecans! It is so good! :)"

  • Mix ingredients and pour into pie shell.
  • Bake at 350*F for 40-45 minutes.
  • If the pie does not appear to be set after 45 minutes, cook in five minute increments until it is slightly jiggly in the middle (a little like Jello) and allow to cool and it will set up.

  1. Never having made pie before, I wasn't sure if the ingredients would actually come together to form a pie filling. How wrong I was. Very sweet, but not cloyingly so, this is a richly textured venture of decadence. I was told (by members of my book club, who raved about it), that it's a cross between a shoo fly pie and a pecan pie. I just know that it has a nice viscous almost syrupy texture, especially when absorbed by the crust. Above this foundation, the dark fruitiness of the raisins dance with the rather more reserved coconut flavors. The pecans provide their contrasting nuttiness that adds to the roasted quality on which all the sweetness rests. Very Highly Recommended, with especial consideration given to the ease of the recipe.
