Impossible Pumpkin Pie

- 3⁄4 cup sugar
- 1⁄2 cup Bisquick baking mix
- 2 tablespoons butter
- 1 (12 ounce) can evaporated milk
- 2 1⁄2 teaspoons pumpkin pie spice
- 2 eggs
- 1 (16 ounce) can canned pumpkin
- 2 teaspoons vanilla
directions
- Heat oven to 350 degrees.
- Grease pie plate, 9 x 1 1/4 inch.
- Beat all ingredients until smooth.
- Pour into pie plate.
- Bake for 50 to 55 minutes or until knife inserted in center comes out clean.

I made Impossible Pies when they first came out years ago. There are several versions. This is one of the better recipes. I am not a fan of thick pie crusts and I do not make pie crusts. This was such a blessing for me. So quick, so easy and so tasty. Thanks for sharing and reminding us of this easy alternative.

I like to sew, crochet and to do crafts. I am a 4-H Club Leader and I have a great group of kids this year. They keep me very busy and I wouldn't have it any other way. We do 3 fairs in the area.
I also like to go to auctions, yard sales and I am always buying items from the kids that they are selling to raise money for school, church or a youth group.
