- 1⁄2 cup cream-style cottage cheese
- 1⁄4 cup parmesan cheese, grated
- 1 lb lean ground beef, browned and drained
- 1 teaspoon dried oregano
- 1⁄2 teaspoon basil leaves
- 1 (6 ounce) can tomato paste
- 1⁄2 cup mozzarella cheese, shredded
- 1 cup milk
- 2⁄3 cup Bisquick baking mix
- 2 eggs
- 1 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 1⁄2 cup mozzarella cheese, shredded
directions
- Preheat oven to 400F (205C).
- Grease 10" pie plate.
- Layer cottage cheese and Parmesan cheese in plate.
- Mix beef, herbs, tomato paste and Mozarella cheese.
- Spoon beef mixture on top.
- Beat milk, eggs, salt and pepper in blender on HIGH until smooth (about 1 minute).
- Pour into plate.
- Bake at 400F (205C) for 30 to 35 minutes or unril knife inserted in center comes out clean.
- Sprinkle with Mozzarella cheese.

This was easy to put together and the kids (and my husband) really enjoyed it. I thought it was too salty, but that can be easily fixed. The meat mixture, along with the cottage cheese and the parm was really tasty. The "pie" crust on top was fine, but I'd rather just eat the meat mixture with some pasta. But this was clever and fun and I enjoyed serving this lunch to my family.Reply
