- 1⁄2 cup green onion, chopped
- 1 tablespoon butter
- 1 package spinach, thaw & drain
- 1⁄2 cup cottage cheese
- 1 cup milk
- 1⁄2 cup Bisquick
- 3 eggs
- 1 teaspoon lemon juice
- 1⁄4 teaspoon pepper
- 3 tablespoons parmesan cheese
- 1⁄4 teaspoon nutmeg
directions
- Layer spinach, onions and cottage cheese in greased dish.
- Put rest in Blender.
- Pour over cheese.
- Bake at 350 for 35-45 min until tests clean with knife.

I chose this recipe because it's exactly the one in my Bisquick Cook book. I used some ricotta with my cottage cheese (since that's what I had) and it worked out great. I loved that the spinach stayed distributed evenly and didn't sink to the bottom of the dish! I prefer fresh spinach over frozen, but in this dish it is just fine! This turned out like the photo in my book! Thanks Ngibsonn- I'll make this one again. Roxygirl
