directions

 • Heat oil in large skillet on medium-high heat.
 • Scrub potatoes. Peel them if you like. Stand each potato on end, and slice in half. Slice each half in half again. (Watch your fingers.) Lay the quarters on top of each other, and cut into thin strips. If you can't get the quarters to lay together, just slice each one individually. No biggie.
 • Check to see if your oil is hot enough by dipping the end of one fry in it. If the oil bubbles up and makes noise, the oil is ready. Put about a quarter of the fries in at a time. Cook until they turn the color that you like. Some people like soft fries, other crispy. Go with what looks good to you.
 • While the fries are cooking, get a plate ( a real one, not paper or plastic) and place about four paper towels on it.
 • When the fries are done, put them on the paper towels to drain. Put the skillet back on the heat, and let it heat back up. Put the next batch of fries in the oil. Salt the finished batch of fries. Add more paper towels on top of the fries.
 • Eat and enjoy!

 1. I liked the detailed instructions, great for new cooks. If you like a crunchier fry just cook until lightly brown..drain on paper towel and freeze. After they freeze, remove and fry again. Thanks Amanda

 2. Thanks for the info. First time i cooked fries i caused a fire by turning on the water faucet over the hot oil to flush the skillet. I hope nobody reads this...

I live in TN with a husband, 9 year old, 6 year old, and our two dogs. I'm a busy mom who loves to cook for family and friends. We have two boys, and they are the light of my life! My husband is a restaurant manager. We actually met while working together at Bob Evans in another city. He was one cute grill cook!! Now he is one cute manager, and I am so proud of him! He currently works for El Chico, and he is very happy there.
I am a stay at home mom who sometimes does temp work, which is a big change from corporate America. We'll see how that goes. Now that I have some more time, I plan to get back to the kind of cooking I used to do. You know...with pots and pans instead of a take out menu. I love to crochet, garden and hike with the family. Thanks in advance for any reviews you do of my recipes. :)
