- 5 eggs
- 3⁄4 cup caster sugar
- 1 lemon, rind of, grated
- 2⁄3 cup lemon juice
- 125 g chilled butter, cut into small cubes
directions
- Beat eggs and sugar until pale and doubled in volume.
- Stir in lemon rind and juice.
- Place bowl over a pan of simmering water.
- Add butter piece by piece, whisking constantly until thick.
- Serve cold.

Haha, I had an open jar of storebought lemon curd in the fridge, and after tasting this in comparison to that one, I tossed the remainder of the storebought jar because it tasted artificial to me! This did take a long time to thicken up, but I think it's because I had turned the heat down too much. Once I increased the heat a bit, it thickened up pretty quickly. I used most of this in Recipe#450649 by gailanng (which it was lovely in, I might add). So fresh-tasting, and pretty simple to make, too. Thanks for posting! Made for The Honeys for ZWT8
