ingredients
- 1 big fresh pineapple, ripe
- 2 cups ice cubes
- 1 1⁄2 cups sugar
- 1 teaspoon lemon juice (optional)
directions
- Peel the pineapple.
- Remove the heart.
- Cut the rest of the pineapple in small pcs.
- Crush the ice.
- Use the blender to puree the chopped ice, the pineapple, sugar, and lemon juice.
- Freeze.
- For best results, the pineapple should be very cold.

OK, this is going to be my go-to dessert for the rest of the summer. I froze the pineapple pieces for 4 hours before pureeing and used slightly less sugar as my pineapple was literally dripping sweet juice. Loved how easy it was and everyone enjoyed it. There's not much left, but I think I'll have it with a little cachaca or rum mixed in.

This is the *ultimate* summer refresher. Of course right now it's the middle of a snow storm, but if you close your eyes while your eating this, you can picture yourself on a tropical island. Sooooo wonderful. Very easy to make, and quick too. I reduced the sugar to 1/2 cup since the fresh pineapple is quite sweet, and it's very good.
