First I bought what I thought was coconut milk only to find out that it was the creme of the coconut, so by the time I found the milk, my ginger went bad. So I wound up using fresh pineapple, gala apple, fresh pineapple and ground ginger. I used a blender to mix it all up and I have to say I was pleasantly surprised by the ginger flavor to this rendition of a favorite pina colada beverage. Very yummy. Made for Veg 'N Swap tag #36.
There are times when I just can't find a really good whole pineapple, so went to my canned goods instead! I did put the pineapple chunks in the freezer until almost frozen & all the other ingredients were chilled in the frig before using! Absolutely loved this combo of flavors! A definite keeper!
