- 1 (8 ounce) package cream cheese, softened
- 1 (14 ounce) can Eagle Brand Condensed Milk
- 1⁄3 cup lemon juice
- 1 (8 ounce) carton Cool Whip
- 1 (15 ounce) can crushed pineapple, drained
- 1⁄2 cup pecans, chopped
- 2 graham cracker pie crusts
directions
- Combine cream cheese, Eagle Brand milk, and lemon juice and beat until smooth.
- Stir in pineapple and pecans and fold in cool whip.
- Divide mixture evenly between both pie crusts.
- Chill in refrigerator for 4 hours before serving.

I've been making this pie for several years, just now writing a review. I love everything about this pie: it's quick, simple and cheap to make, and it is so delicious. I've made this pie multiple ways, by following the recipe exactly, by decorating the top with other types of fruits, and by chopping up other fruits to add to the pineapple. I've made this many times and taken it to work potlucks and to family gatherings, and everyone always loves it. This pie is *almost* foolproof, but I have accidentally caused the filling to be a little runny by not draining out all the pineapple juice. Great recipe for a fantastic pie!
