Greek Spinach

ingredients
- 1 (10 ounce) package frozen chopped spinach
- 1⁄2 cup frozen pearl onions
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1⁄2 teaspoon minced garlic (more if you like garlic)
- 1⁄4 cup crumbled feta
directions
- Cook spinach according to directions, but add the onions to the sauce pan.
- Drain well, squeezing out as much moisture as possible.
- Add remaining ingredients, expect feta.
- Stir until well combined.
- Sprinkle with feta and toss to combine.

made according to recipe, only substitution was fresh swiss chard from our garden. We are having a bumper crop this year, so are using several spinach recipes -- but chard is so much more flavorful and the consistancy is so much more appealing than spinach -- no slimy, cooked-down sensation in your mouth. Thanks for posting, Jules211.

I'm a working mom of 2 my son is 14 and my daughter is 11. O.K. 3 kids if you count my hubby. My son is on the picky side but loves food with a kick. My daughter will eat anything(yes even sauerkraut) the only thing hubby won't eat is raw cabbage he's getting better thanks to this site (he even ask me to make slaw). I love to cook and try new things. One of our favorite stations is food network.I've been playing around with pics and updated my pic & my icon. O.k. Tim because well just because i love to cook with the Cd player or radio blasting and i love his stuff. The Dancing Bears because my DH and i are (were) huge dead heads.
