Gingered Fruit Salad

ingredients
- 2⁄3 cup orange juice
- 1 1⁄2 tablespoons lemon juice
- 1 tablespoon honey
- 1 tablespoon brandy (optional) or 1 tablespoon ginger-flavored brandy (optional)
- 2 bananas, sliced
- 2 apples, cored and chopped
- 10 dried apricot halves, chopped
- 2 teaspoons crystallized ginger, chopped
- 1 kiwi fruit, peeled and sliced
directions
- Combine juices, honey and brandy (if using) in a measuring cup or bowl.
- In a large bowl combine fruits (except for the kiwi) and ginger.
- Pour sauce over fruit and toss. Cover and refrigerate for at least one hour.
- Spoon salad into bowls and top with kiwi slices.

This has become a Christmas breakfast staple in our house and is a family favorite. I make a couple of changes, though. I combine the candied ginger the night before because I like the subtle ginger flavor throughout, although it tastes great both ways! I also use additional fruits not listed here, such as: berries (this year, blueberries), pomegranate, mango, dragon fruit (so beautiful - makes for a great presentation for a holiday meal), clementine wedges, and I always garnish with STAR FRUIT! So pretty!

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes.
