Ginger Teriyaki Chicken

"A recipe from the back of a label from a can of LaChoy bean sprouts. The original recipe called for either chicken breast or thighs. We prefer chicken thighs and I often make it with whatever vegetables that we have in the fridge. It also called for serving this over crispy rice noodles, but since I am gluten free this was left out."

  • Stir together teriyaki sauce, pineapple with juice, ginger, garlic and green onion in small saucepan.
  • Heat to a boil; reduce heat and simmer 5 minutes.
  • Heat 1 tablespoon of the oil in large skillet or wok over high heat.
  • Cook and stir vegetables about 4 minutes or until crisp-tender.
  • Remove from skillet; set aside.
  • Pour the remaining 1 tablespoon oil in skillet.
  • Cook and stir chicken about 4 minutes or until no longer pink.
  • Add cooked vegetables back to skillet.
  • Stir in bean sprouts, water chestnuts and prepared sauce; heat through.
  • Serve over rice.

  1. Quite delicious! The only think I changed was that I didn't have fresh ginger, so I just used a tiny bit of ground, and it still tasted good :-) My toddler and my husband where both very impressed, and gobbled it up. Easy to make and delicious? I'll be making this one again.
     
  2. I love everything about this dish!! The flavour, the texture, the presentation - everything. The flavour is spot on for teriyaki. I used fresh veggies (celery, snow peas, green bell pepper and mushrooms). I usually cook with chicken breast because it is healthier - but this dish reminded me that chicken thigh packs a lot of flavour. I recommend that you do not substitute the thigh meat with chicken breast. I used double the amount of ginger and I did not have bean sprouts and we did not miss them in the dish. The crunch of the water chestnuts was perfect. I seriously must have said 'I love this' at least 5 times during dinner. :) Thank you for sharing this recipe! Made for Newest Zaar Tag.
