- 5 large potatoes, peeled and cut into 1/2 inch cubes (about 2 1/2 pounds)
- 15 garlic cloves, peeled and halved
- 2 teaspoons salt, divided
- 1⁄2 cup butter, softened
- 1⁄2 cup whipping cream
directions
- Place potatoes, garlic and 1 teaspoon salt in a large saucepan; add enough water to cover.
- Bring to a boil; reduce heat.
- Cover and simmer until potatoes are tender, about 10 minutes; drain.
- Transfer potatoes and garlic to a mixing bowl; mash or put through ricer.
- Add butter, cream and remaining salt; beat until smooth.
- Do not overbeat potatoes lest they turn into a glutenous mass!

I was also worried that it had too much garlic but I doubled and followed the recipe and it came out so yummy! I used red potatoes and left the skin on. To add a kick to it, I reduced the milk by a fourth and replaced it with a large chunk of cream cheese. It also reheats really well with a little added milk!

Really good. I just couldn't use the cream with 1/2 cup of butter so used half and half instead. How could these not be good with all the butter and garlic. There was a nice hint of garlic, even with 15 cloves, not overwhelming though. Very good recipe. Served this with Honey-Bourbon Grilled Pork Tenderloin and peas. Thanks LHM
