Fruit Sweetened Berry Pie

"This is a delicious berry pie that only has fruit in it! That is right, no sugar is added! I made it at Christmas along with a sugary berry pie and you could hardly tell the difference. So... if you want a healthy version of a berry pie, try this one!"

  • 1 double crust pie crust
  • 2 lbs berries (1/2 of the bag of mixed berries from Costco is great!)

  • 14 teaspoon orange extract
  • 2 teaspoons cinnamon
  • 3 tablespoons butter

directions

  • In large saucepan, combine the berries (I have used fresh black berries and the mixed berries from Costco), the thinly sliced apples (I have used granny smith), the flour, orange zest, orange extract and cinnamon. Stir over medium heat until thickened. Make sure to keep stirring so the berries don't scorch. Line a pie pan with crust. When berries are thickened pour into lined pie dish and top with butter, if desired. Top with second pie crust and crimp edges. Cut slits in the top of the pie and bake at 350 degrees for about 30 minutes or until crust is golden. Enjoy!

  1. I really wanted to like this! Perhaps the apple makes the berries sweeter, or perhaps the Costco brand of frozen berries is naturally sweet. However, beware using store bought fresh berries or even the store brand. They will need to be VERY sweet, otherwise, this pie turns out sour and not very tasty. While heating up the berries and other ingredients, a quick taste test let me know I needed to add some kind of sweetener. Not wanting to overdo, I only added 1/2 cup combined of regular sugar and sugar substitute. Wasn't enough. When pie was done baking and cooling, we ended up having to add some sweetener to each slice.

I am a mommy of three, soon to be four and I like to cook as healthy as I know how for their little mouths (and my husband). I avoid processed sugar when at all possible and artificial sweetners at all costs. I enjoy coming up with tasty desserts that are naturally sweetend. I don't necessarily follow recipies but rather use them for inspiration. I also like to lear about new and unusual flavor combinations.
