ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1⁄2 cup sugar
- 4 teaspoons baking powder
- 1⁄2 teaspoon salt
- 2 tablespoons butter, melted
- 1⁄2 cup applesauce
- 2 egg whites
- 1 cup fresh strawberries, crushed
directions
- Preheat oven to 400 degrees.
- Comine and sift dry ingredients.
- Add butter, applesauce and egg - Mix lightly.
- Stir in strawberries.
- Turn into greased muffin tin.
- Sprinkle with sugar.
- Bake 15-20 minutes.

I gave this recipe 3 stars. These were good tasting muffins. I made a few minor changes to this recipe. I used Splenda for the sugar, I added 2 scoops strawberry protein powder and used 2 whole eggs. My muffins weren't light but were heavy maybe as per the changes I made. Overall I thought these would have had more a strawberry flavor. Thanks for posting! Christine (internetnut)

This is a very nice light muffin even with the mix of whole wheat. I thought they would be more dense but they did remain moist. Very healthy and a nice flavor. I did add a couple of dashes of cinnamon as I just love that spice with muffins and it was a hit with the strawberries. Made for the NEW KIDS ON THE BLOCK tag game.
