Fresh Apple Coffee Cake With Essence of Orange and Cranberries

  • Preheat oven to 350 degrees Fahrenheit.
  • Spray a bundt pan with cooking spray and set aside.
  • Mix apples, spices, orange juice, egg substitute, and sour cream.
  • Stir in sugar and set aside.
  • Sift together flour, salt, and baking powder.
  • Stir dry ingredients into wet until just moistened. Stir in vanilla.
  • Fold in dried cranberries.
  • Pour into prepared bundt pan.
  • Bake at 350 degrees Fahrenheit for 1 hour or until toothpick comes out clean.
  • Note: This is a very moist cake so you may need to cook longer, depending on oven.

  1. 5 plus stars !! I found I did not have enough apple so added a cup of carrot to get the correct fruit quota and this was a delicious moist loaf, addictive when warm with butter. I left out the cranberries as I only had tinned and thought the juice would affect cake. The spices were a marvellous addition and could be smelled throughout the house !! Made for Everyday is a Holiday Tag.

  3. I thought I'd done something wrong at first. It made a really stiff, dry dough which I wasn't expecting. I liked the easy ingredients like the shredded apples ( I just cored them & put them in the food processor) It was definately a moist loaf as stated (more so than I care for generally speaking) However, toasted with butter it was really great. The flavors were mild and not too sweet. Easy and very good overall.
     
  4. This is a very nice coffee cake. And the best part, it is low fat! The only change I made was using 1/2 cup brown sugar and 1/2 cup Splenda, for dietary reasons. I might add some orange zest next time, for added orange flavor. Dried cherries would be nice also, or raisins. One suggestion: Mix the vanilla in with the other wet ingredients. It is a little hard to mix in later without over mixing. I served this with a dollop of non-fat, sugar free vanilla yogurt. Thanks for this keeper!
     
  5. Just comments from this humbled baker - In spite of trying all that I knew, I could not get this cake to cook through. I thought I followed the recipe to a T but after 1 hour and 45 minutes,(tented the last 30 minutes) the center was still raw. I then de-panned it, cut it into quarters and baked another 15 minutes. Still not done. I obviously over-measured some liquid as I am positive that I used the right amount of flour. I was truly hacked off at myself– the smell as it baked was DIVINE and the outside pieces that _were_ done tasted wonderful – the cloves and orange are a great combo. I’ll try this one again when Baking Therapy is over and I have my self-esteem back . :-)

We eat very healthy, after a life altering experience at 31 I've been on a journey to be healthy and lose weight.&nbsp; I've lost 50 lbs and have kept most all of it off for the last 9 years. There are always fluxs, durring stressful times, but I've mananged to keep most of the weight off.&nbsp; My best advice to anyone trying to lose weight is to remember that it didn't get there overnight and it won't come off overnight. I've never said I was on a diet. It is a lifestyle.</p> <p>When Zaar first changed to Food I took a short hiatus.
