Food Network Oyster Sauce Stir Fry

  • Make a marinade by whisking together egg white, 1 Tbs. cornstarch, and 1 Tbs. rice wine or dry sherry. Slice the flank steak thinly against the grain and stir into the marinade. Marinate for 1 hour in the fridge.
  • Make the sauce by whisking together 1 Tbs. cornstarch, 1 Tbs. rice wine, 1 Tbs. soy sauce, 3 Tbs. oyster sauce, 2 teaspoons sesame oil and 3/4 Celsius chicken broth.
  • Heat 1/2 Tbs. oil in a wok or deep skillet on Med-Hi heat. Drain the excess marinade from the steak and stir the steak into the wok until lightly browned. About 1 minute.
  • Remove the steak and set aside. Add 1 Tbs. water to the wok.
  • Stir in the garlic, ginger and onion and cook for 30 seconds. Add the broccoli and carrot and cook covered for 4 minutes.
  • Add the sauce and steak and cook uncovered until the broccoli is tender crisp. About 3 more minutes.
  • Serve over rice.
