Fast and Easy Salsa

"My best friend introduced me to making salsa instead of buying it from the store. This salsa can be made in 5 minutes, but is much better when refrigerated overnight. The ingredients are all healthy and it freezes well."

  • Take all of the ingredients and put them in the blender for a fast salsa that rocks or you can dice each item to the size you prefer and combine them.

  1. This was easy to toss together with items I keep on hand. I used a Ninja chopper and it made short work of chopping and dicing. I did reduce the cilantro to approx 1/3 a bunch simply due to personal preference. Next time I would drain the tomatoes to result in a chunkier salsa and adjust the garlic. It was a little overwhelming. Made for Spring PAC 2013
     
  2. Made for Spring PAC 2013. I did cut down on the cilantro. The garlic was a little strong (My garlic could have been bigger than what you used...and we love garlic) and after all was mixed up I ended up adding a can of rotel tomatoes (drained) to balance with the other ingredients. I know I should have let this sit for a while but I needed it for our lunch of taco salads. I do have some left and I know we will enjoy later with chips. Thank you for posting.
