Emerald Mine (Carnival Cocktail #3)

"I got a bar menu on-board ship during our recent cruise & had the names of some specialty drinks, but no recipes for them. Most were tasted, touted by another (there were 6 of us) or just sounded good to me. So I did the Zaar searches & found most of the recipes at the Carnival Connections site. Enjoy !"

Yum!! Not only was this drink pretty to look at, but it was delicious, too. The addition of the pineapple and coconut brought a tropical flavor to a very, dreary winter evening. I can't wait to enjoy this refreshing drink during the heat of the summer. Thank you for sharing this wonderful recipe...it is definitely a keeper!!<br/>*Made for 2010 Football Pool*

Tropical and fruity-licious! The pineapple and coconut transport you directly to the balmy breezes and sun warmed beaches even in the middle of winter! Great drink twissis! Made for your win in zaar's *Football Pool*

I am an American transplanted from Dallas to Iceland by marriage to a native Icelander & I retired to become his "Kitchen Queen". We love to entertain our family & friends, so I have an eclectic collection of recipes. I especially love simple, easy-fix, flexible & make-ahead recipes - BUT also like challenging myself on occasion. I enjoy baking & food photography. I am devoted to the "More is Always Better Principle" & apply it liberally to bacon, butter & garlic. I can have ingredient issues due to availability here in Iceland & my DH is medically diet-restricted from some ingredients as well. Either situation might require me to modify a recipe, but I will do my best to be true to your recipes & fair/honest in my reviews. Mary Pat (aka twissis)
