This is another good recipe from Pampered Chef. I use my small oval stoneware baker. I sometimes substitute cooked crisp bacon for the ham.

- 3 eggs
- 3 tablespoons milk
- 2 slices white bread, cut into 1-inch cubes
- 1 green onion, with top thinly sliced
- 1⁄3 cup shredded cheddar cheese
- 1⁄3 cup chopped ham
directions
- Preheat oven to 350 degrees.
- Spray small 2-cup capacity oval baker with vegetable spray.
- In bowl, combine eggs, milk, bread, green onion, cheese and ham; mix well.
- Pour egg mixture into baker.
- Bake 20-25 minutes or until egg mixture is set.

I just made this for my fiance before a long, hard day at work. I tweaked the recipe a lot (Hawaiian bread instead of white bread, bacon instead of ham, onion powder because it's 4:00 am and I didn't want to chop, a touch of dijon mustard with the eggs), but it's delicious and set up just how I hoped it would!Reply

Whipped it up one morning before my wife woke up. I had mine right away, and heated hers when she woke up. It reheated nicely and gave me the idea that it would be the perfect Sunday morning breakfast when time is short for us. I made it tonight and will reheat it tomorrow. So nice to find this yummy recipe!Reply

I've been looking for a recipe like this for years and it was a big hit with my husband. I did not have ham so I used turkey sausage crumbles and borrowing from my big egg casserole recipe, I added a tiny pinch of ground mustard and salt and pepper. It was perfect and now that we are eating home every morning this recipe will definitely be a repeat!Reply

Cooking for one, so used two eggs and adjusted rest on the fly. Had no bread, so I cut up an English muffin, which worked really well. Had no meat, so used a bit more cheese. Added garlic chives and lovage to the mix, as well as salt and pepper. I do feel it needed a little something more - maybe some Tabasco or sauteed onion or something else. But a nice change from my usual eggs.2Replies 1
