  • Preheat oven to 325°F.
  • Grease and flour a loaf pan or 4 mini loaf pans.
  • In a bowl, combine flour, baking soda, baking power salt, and cinnamon and stir to mix thoroughly.
  • In a mixer, combine butter and sugars and mix to creamy consistency.
  • Add bananas to mixer and mix well.
  • Add vanilla, lemon juice, eggs, and buttermilk and mix well.
  • With mixer on low speed, add dry mixture gradually. Mix only until incorporated.
  • Put batter into loaf pan or divide evenly among the 4 minis.
  • Put into oven, 1 hour, 10 minutes for the loaf pan, 35 minutes for the minis.
  • Cool for 5 minutes, then remove from pan(s) onto a cooling rack.
