- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1 1⁄2 teaspoons cinnamon
- 1⁄2 cup white sugar
- 1⁄2 cup brown sugar
- 8 tablespoons butter, softened
- 1 1⁄2 cups mashed bananas (3 large, extra ripe)
- 1 1⁄2 teaspoons vanilla extract
- 1 teaspoon lemon juice
- 2 eggs, beaten
- 1⁄2 cup buttermilk
directions
- Preheat oven to 325°F.
- Grease and flour a loaf pan or 4 mini loaf pans.
- In a bowl, combine flour, baking soda, baking power salt, and cinnamon and stir to mix thoroughly.
- In a mixer, combine butter and sugars and mix to creamy consistency.
- Add bananas to mixer and mix well.
- Add vanilla, lemon juice, eggs, and buttermilk and mix well.
- With mixer on low speed, add dry mixture gradually. Mix only until incorporated.
- Put batter into loaf pan or divide evenly among the 4 minis.
- Put into oven, 1 hour, 10 minutes for the loaf pan, 35 minutes for the minis.
- Cool for 5 minutes, then remove from pan(s) onto a cooling rack.
