ingredients
- 1 1⁄2 cups diced tomatoes
- 3⁄4 cup jicama, diced
- 1 1⁄2 cups red bell peppers or 1 1/2 cups green bell peppers, diced
- 1⁄4 cup red onion, diced
- 1⁄2 jalapeno pepper, minced
- 4 tablespoons dried cranberries
- 2 tablespoons fresh cilantro, chopped
- 2 1⁄2 tablespoons lime juice
- 1⁄4 teaspoon ground black pepper
- 1 teaspoon salt
directions
- Combine all ingredients in a medium bowl.
- Let stand 30 minutes at room temperature to allow flavors to mix.
- Serve at room temperature.
- Cover and refrigerate any remaining salsa.

Made 2 small changes when preparing this salsa ~ I used a rounded 1/3 cup of dried cranberries (we love those buggers) & cut the amount of jalapeno back to about 1/3 of a chili! Other than that, though, the recipe was followed & the salsa is wonderful! We had it with a pork salad sandwich & look forward to topping other meats with it! Thanks for a great recipe!
