Crock Pot Tomato and Rice Casserole

"A nice side dish for your favorite meal. I use my Rival 6 quart crock pot with a two sided crock. I place this in one side and a vegetable in the other."

  • In a skillet, saute the rice in butter until the rice is golden brown; place in crock pot.
  • Pour the tomato liquid, tomatoes, parsley, salt and pepper into the crock pot; mix well.
  • Cover and cook on LOW setting for 6 to 8 hours.
  • Before serving, sprinkle with grated Parmesan cheese and chopped chives.

  1. Sorry! - Definitely needed something. Tasted like diced tomatoes over rice - no flavor. Maybe some garlic and onions? The only real flavor came from the cheese on top. Tried for Bargain Basement Tag 2009.

LOL I use my crock pot everyday of the year. <br> <br>My three children are now in college and before they come home they request their favorite meal. I still continue to cook in the crock pot for my husband and I. It is nice after a long day to know your meal is ready. It also helps in keeping my grocery bill down. With zaar, I can print my shopping list and that is all I purchase is the ingredients on that list. <br> <br>Now, my two daughters have been crock pot cooking while in college. They find it is easy to cook for the themselves and their friends. It is an easy way to have friends over for dinner after classes <br> <br>I still love trying new recipes and purchasing cookbooks, especially crock pot cookbooks. <br> <br>Happy Cooking!
