- Place sieved flour and salt in a bowl. Make well in the centre.
- Add the egg and milk gradually, incorporating the flour from the sides, whisk to a smooth batter. mix in the melted butter.
- OR else ignore the above two steps and throw everything in the blender and blend for as few seconds until well blended, but don't over do it!
- Heat pancake pan. With a paper napkin, smear some oil.
- Add enough mixture to just cover the bottom of the pan thinly.
- Cook for a few seconds until lightly brown. Turn and cook on the other side.
- DON'T let them become crisp or you won't be able to roll them.
- You may serve these by sprinkling with sugar, adding a few drops of lemon juice and then folding in half, then in half aagain.

I live in a beautiful village on the island of Malta ( Europe) with my wonderful daughter, partner and two cats. I love the vineyards infront of my house or walking down to the valley of olive trees.
( I do pick olives every year)
Some years ago I stopped working as a chef but still do a lot of home cooking. What I miss are the expensive ingredients I worked with, its rather hard cooking on a tight budget. My aim is to produce recipes that are very economical and yet nutritious.
