  • Mix together all ingredients except 3/4 cup of jack cheese.
  • Spoon 3-4 tablespoons into each tortilla and roll them tight with the end facing the bottom of a greased 13x9 glass dish.
  • Pour whipping cream over all enchiladas.
  • Sprinkle remaining jack cheese over the top fo enchiladas.
  • Cover and bake at 350 degrees for 20-30 minutes. Uncover and broil to bubbly and golden.
