Creamy Chicken Enchiladas

- 2 boneless chicken breasts, cooked and shredded
- 6 ounces chopped olives
- 6 ounces chopped green chilies
- 1 small onion, diced
- 8 ounces cream cheese, at room temperature
- 1⁄2 cup grated monterey jack cheese
- 3⁄4 cup monterey jack cheese, for top of enchiladas
- 8 -10 flour tortillas
- 1 pint whipping cream
directions
- Mix together all ingredients except 3/4 cup of jack cheese.
- Spoon 3-4 tablespoons into each tortilla and roll them tight with the end facing the bottom of a greased 13x9 glass dish.
- Pour whipping cream over all enchiladas.
- Sprinkle remaining jack cheese over the top fo enchiladas.
- Cover and bake at 350 degrees for 20-30 minutes. Uncover and broil to bubbly and golden.
