Cranberry-Orange Relish

- 3 cups fresh cranberries, washed and drained or 3 cups frozen cranberries, thawed washed and drained
- 1 cup granulated sugar
- 1 tablespoon finely shredded orange zest
- 2 cups orange sections, seeded and cut in chunks
- 1⁄2 cup chopped pecans
directions
- In a medium saucepan, over medium heat, stir together 1/3 cup cold water with cranberries, sugar, and orange peel. Cook, stirring occasionally, until sugar dissolves. Increase heat to medium-high and simmer, uncovered, until cranberries pop and mixture begins to thicken, about 8-12 minutes. Cool completely. Stir in orange chunks. Cover and chill at least 8 hours. Stir in pecans.

After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
