Cranberry Betty (1958)

  • Preheat oven to 375°F.
  • Peel and slice the bananas and sprinkle the lemon juice over them. Set aside.
  • Combine sugar, crumbs, cinnamon and nutmeg and mix well. Remove 1/2 cup of mixture and set aside.
  • Place alternate layers of crumb mixture and bananas in a 1 1/2 quart casserole or baking dish.
  • Top with cranberry sauce, reserved crumb mixture, and lemon zest.
  • Dot with butter.
  • Bake 25 minutes.

Made just one change (more or less) ~ Although it wasn't stated in the recipe one way or another, I did use breadcrumbs from a very flavorful, nutty, whole grain bread (rather than white breadcrumbs), & although my did change the flavor, the resulting Betty was great! I love cranberries, so I know I'll be making it again before long! Thanks for posting the recipe! [Made & reviewed in Everyday Is a Holiday recipe tag]
