Cranberry Betty (1958)

- 4 -5 bananas
- 1 lemon, juice of, about 1/4 cup
- 1 cup firmly packed brown sugar
- 3 cups soft breadcrumbs
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon nutmeg
- 1 (14 ounce) can whole berry cranberry sauce
- 1 grated lemon, zest of
- 2 tablespoons butter
directions
- Preheat oven to 375°F.
- Peel and slice the bananas and sprinkle the lemon juice over them. Set aside.
- Combine sugar, crumbs, cinnamon and nutmeg and mix well. Remove 1/2 cup of mixture and set aside.
- Place alternate layers of crumb mixture and bananas in a 1 1/2 quart casserole or baking dish.
- Top with cranberry sauce, reserved crumb mixture, and lemon zest.
- Dot with butter.
- Bake 25 minutes.

Made just one change (more or less) ~ Although it wasn't stated in the recipe one way or another, I did use breadcrumbs from a very flavorful, nutty, whole grain bread (rather than white breadcrumbs), & although my did change the flavor, the resulting Betty was great! I love cranberries, so I know I'll be making it again before long! Thanks for posting the recipe! [Made & reviewed in Everyday Is a Holiday recipe tag]
