- 2 tablespoons olive oil
- 1 cup chopped andouille sausage
- 1 small yellow onion, chopped
- 1⁄2 cup chopped green onion
- 4 tablespoons chopped celery
- 4 tablespoons chopped green bell peppers
- 2 tablespoons minced garlic
- 2 cups coarsely crumbled corn muffins
- 1 cup chicken stock
- 1 teaspoon creole seasoning
- salt and pepper
directions
- Heat oil in a large skillet over med. high heat.
- Add yellow onions and sausage.
- Saute 1 minute
- Add green onion, celery, bell peppers and garlic.
- Saute 1 minute
- Stir in corn muffins, stock and Creole season. Season to taste with salt and pepper.
- Cook stirring and shaking the skillet about 2 minute
- Remove from heat and serve.
