  • Bring a large saucepan of water to a boil.
  • Add corn and sugar.
  • Simmer 1 minute.
  • Drain in a colander, and pat dry with paper towels.
  • Arrange tomatoes and corn on a serving platter.
  • Season with salt and pepper.
  • Drizzle with olive oil and serve.

  2. Loved it! Like any True Zaar Addict I print recipes and take them with me on holiday.. this is recipe was made last week during our stay in Portugal. The local tomatoes were some of the best I have ever tasted, oozing flavour and so this was destined to be a winner from the start. The only reason it's not a 5 is that DH said that for him, it needed something a little extra after a little taste, so I added a decent helping of fresh chopped coriander/cilantro and it went down a treat. Please see my rating system: 4 stars for a tasty salad dish that's great both with and without the coriander. Thanks!

I live with my husband of 34 years in Oregon. We have 3 great kids and 4 beautiful grandchildren, 6 year old triplets and a soon to be 2 year old. Our daughter lives in Athens, Greece with her husband and our youngest, a son, just got married last summer. My stepson and his wife are the parents of our grandchildren and live about an hour away. Our family is growing and it's always fun to have them all together! I love to travel. I have just returned from a trip to Vietnam and have visited our daughter in Greece several times. During my travels I always enjoy the local food and have fun trying to re-create it at home. To pay the bills, I've been a hairstylist for 40 years and I still love it. I knit, sew, read and I'm just beginning to become interested in quilting,digital scrapbooking and geneology.
